Do Canadians need a visa for Mozambique?

No traditional visa — but yes to the ETA. Canadian passport holders are among the 29 visa-exempt nationalities, so instead of a full visa you obtain an Electronic Travel Authorisation online before you travel. It covers tourism and business stays up to 30 days. Most Canadian travellers connect through Johannesburg, Addis Ababa, Doha or a European hub; your ETA must be approved before that first flight, because the airline checks it when you leave Canada.
